Cream Cheese Cranberry Muffins

Cream Cheese Cranberry Muffins

1 cup butter, softened
1 package (8 ounces) cream cheese, softened
1 1/2 cups of sugar
1 1/2 teaspoons vanilla
4 eggs
2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
2 cups fresh or frozen cranberries (I use fresh and use way more than 2 cups to use up the whole bag)
1/2 cup chopped pecans

In a large mixing bowl, cream butter, cream cheese, sugar and vanilla. Add eggs, mix well. Combine flour, baking powder and salt: stir into creamed mixture just until moistened. Fold in cranberries and pecans.

Fill greased or paper lined muffin cups 3/4 full. Bake at 350 degrees for 20-25 minutes or until toothpick comes out clean.

This makes a little over 2 dozen muffins.

I have cranberries I frozen around Thanksgiving...I'm thinking I need to make these again! Yummmm! :)
