Need some new ideas for cooking boneless/skinless chicken breasts (m)

cut up and put taco seasoning on them for tacos or taco salad
dip in egg and bread crumbs and bake or fry
chicken salad
bbq sauce
bake with rice
chicken sandwhiches with cheese and bacon, mmmmmm
all time favorite recipe:
box of chicken flavor rice a roni (prepared)
1/4 cup olives chopped
2 sm jars marninaded artichoke hearts chopped and drained (save liquid)
green pepper chopped
cooked chicke, chopped
mix all together and dress with artichoke marinade and 1/4 c mayo

You really limited my ideas with the no tomato thing...lol! I keep almost typing things then remember they have tomatoes.

Cut them into strips, dip in butter then in crushed saltine crackers and bake. Yummy chicken tenders.
Serve grilled on a bun with bacon, guacamole and cheese! This is DH's favorite.
Now I'm hungry!

lol I got hungry posting that stuff too. I might have to try quac on my chicken sandwhich next time. we always do bacon and cheese thought (so bad!)

Just getting tired of the same old things. Want to start making at least one new dinner a week (when DH is home) Maybe even some *fancy* dinners.

Other ideas...
Chicken quesadillas (stir fry some chicken & onions, put on tortillas with cheese & saute in a pan on both sides)
Cover with italian dressing & sprinkle season salt on both sides...bake until juices run clear (this is a fave of ours.)
Tortilla soup (I can find my recipe if you're interested. Lauren Sue has a great one too)
Chicken broccoli & rice casserole

Would love both your recipes, they sound yummy.
Well ya see, DH doesn't like tomatoes, which isn't that unusual. But wait...he use to eat ketchup when he was younger...until he found out what it was made from!?!?!?! Ummm duh!?!?! He will eat spaghetti sauce and salsa...see, me trying to explain this is just as strange as DH is!!!!!
Weird, yes. But not a big deal since he's not home much lol. I just make stuff that he doesn't like when he's not home!

Here's the stuffed chicken recipe. I used 4 breasts, but there was enough cheese mixture for at least 5-6 boneless breasts. And it was so huge when it was stuffed that half a breast was plenty for me! I served mine with pasta & the kids even loved it. DH thought it tasted very gourmet. LOL.
Stuffed Chicken Breasts
4 skinless, boneless chicken breast halves
salt and pepper to taste
1 (15 ounce) container part-skim ricotta cheese
1 (10 ounce) package chopped frozen spinach, drained
1 clove garlic, minced
2 eggs, beaten
1 (8 ounce) package shredded low-fat mozzarella cheese, divided
1 (16 ounce) jar sugar-free spaghetti sauce
Directions
1 Preheat oven to 350 degrees F (175 degrees C).
2 Season chicken breasts with salt and pepper to taste.
Slit open on the side for stuffing; set aside.
3 In a medium bowl, combine the ricotta, spinach, garlic,
eggs and 3/4 of the cheese. Mix well and stuff each breast
with 1/4 of the mixture; secure with toothpicks and place
stuffed breasts in a lightly greased 9x13 inch baking dish.
Pour sauce over all and sprinkle with remaining cheese.
4 Bake at 350 degrees F (175 degrees C) for 45 to 60
minutes, or until chicken is cooked through and juices run clear.
This is my SIL's recipe for Tortilla Soup. (I'll look for Lauren Sue's too...they're very different soups but both amazing!) Making your own chips for garnish is the yummiest! Just cut corn tortillas into slices & fry in oil till crisp. (Don't forget to salt them.) Couldn't be more simple & it tastes awesome!
Tortilla Soup
1 med. onion, chopped
2 cloves of garlic, chopped
2 tbs. oil
3 (10.5) cans of beef broth
3 (10.5) cans of chicken broth
3/4 cup tomato juice
2 tsp. ground cumin
2 tsp. chili powder
1 tsp. salt
1 1/2 tsp. worcestershire sauce
2 cups of cooked chicken (season while cooking)
2 cans of hominy
2 large tomatoes peeled and diced
Corn tortillas, fried crisp and cut in strips
Grated cheddar cheese
Saute onion and garlic in oil. Add beef and chicken broth, tomato juice, cumin, chili powder, salt, and worcestershire sauce. Bring to a full boil. Cover and simmer for 30 minutes. Add chicken, hominy, and tomatoes. Simmer for another 30 minutes and then serve. Place tortilla stripes on top and garnish with cheese.

Sticky Chicken
4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp thyme
1 tsp white pepper (I used regular cause it's all I had!)
1/2 tsp garlic powder (I used more!)
1/2 tsp black pepper
1 large roasting chicken
1 cup chopped onion
in a small bowl, combine the spices. remove giblets from chicken, clean the cavity well and pat dry with paper towels. rub the spice mixture into the chicken, inside and out, making sure to stuff some deep under the skin. Place in a ziploc, seal and refrigerate overnight. when ready to cook, put onion in the cavity and put in the crockpot without any liquid. as the cooking process goes on it will produce it's own juices. cook on low for 8 to 10 hours and it will be falling off the bone!

Green Chile Chicken Enchiladas
Super Easy and KIDS LOVED THIS:
2 cups shredded cooked chicken (to save time, purchase a pre-cooked rotisserie chicken at the store)
1 ½ cups (6 ounces) shredded Mexican cheese blend or Cheddar cheese (divided for recipe)
½ cup HIDDEN VALLEY original Ranch Dressing (<--the secret ingredient)
¼ cup Sour Cream
2 Tablespoons canned diced green chilies, rinsed and drained
4 (9-10 inch) flour tortillas, warmed
Mix together chicken, ¾ cup cheese, dressing, sour cream and green chilies in a medium bowl. Divide evenly down center of each tortilla. Roll up tortillas and place, seam side down, in a 9 inch baking dish. Top w/ remaining ¾ cup cheese. Bake at 350 degrees for 20 minutes or until cheese is melted and lightly browned.
Make 4 servings

I've made this before and it is AWESOME!! Yummy!!

Cheesy Crockpot Chicken
Estimated Times
Preparation Time 10 mins.
Cooking Time 480 mins.
6 boneless chicken breasts
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
1/4 teaspoon garlic powder, or to taste
2 cans (10.75-oz.) condensed cream of chicken soup
1 can (10.75-oz.) condensed cheddar cheese soup
Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in a crockpot. Cook on low all day (6 to 8 hours), according to manufacturer directions. Serve over rice or noodles.
Serving Size: 6
Now, here's how I do it. I don't even bother with the seasonings anymore. I put the chicken in and use cream of chicken or celery, the celery is really good. I then add cheez whiz and some milk. I mix it up and let it cook all day.
My kids love it on egg noodles but it's good on rice too.
Really I was surprised how much they like it. Dh's mom has been over on those nights and loves it too.
