Protein pancakes.... recipe Rate Topic: -----

These are my new favorite breakfast!!

1/2 c. old fashioned oatmeal
1/2 c. cottage cheese
3-4 egg whites (or 1/2 c. eggbeaters)
cinnamon & vanilla if desired
(I also add 1 T. wheat germ & 1 T. ground flax)

Process in food processor or blender until it looks like pancake mix. Cook like pancakes. Makes about 3. I top them w/ my favorite Naturally More Peanut Butter ( http://www.peanutsnack.com ) but you can top as you like. I made them w/ blueberries this morning- yum!

Nutrition info for all 3 pancakes: 300 cals, 4g fat, 32g carb, 4g fiber, 31g protein (that's w/out the wheat germ, flax, or PB)

Hmmm sounds interesting LOL. I guess I am used to the more tradional pancake (you know the ones we are supposed to avoid LOL). I think I may try that this weekend because it definitely sounds very healthy. Thanks for sharing!

I told my running buddies about them & they both made them y'day. They were raving about them this morning & both said that they'd be making them again for breakfast today! Yummy!

Jess!

I'm checking in here from my parents house (on their slooowwww computer, LOL), and am thinking about making these when the whole family comes to my house tomorrow. What brand of oatmeal do you use? I remember the last time I looked at oatmeal at the store, I couldn't believe all the different varieties: quick cooking, regular, organic, etc. I've never bought anything except the instant packets. Thanks!

We miss you already too! :rofl: I use the Quaker Old fashioned oats (sometimes called rolled oats also), not the quick 1 minute kind. (although you could probably use them). Seriously, they're really good! Add some extra cinnamon or pumpkin pie spice too, yummy!!

I don't eat like Jess, but we love these as well. They come from the Body for Life cookbook.

I found the recipe online. Didn't know they were BFL, but have read the book! They are good!

FYI - you have to cook them a LOT longer than regular pancakes, to get them done all the way thru. You can also pour the batter into a pie plate or square cake pan and bake it like a cake - 35 min at 350.

Really? Mine turned out just fine w/ just a couple minutes! Maybe my burner's a bit hotter?? Good idea to bake them like a cake!!

Mine have never needed super long cooking either. Maybe a minute or two more but nothing huge.

I tried these this morning, Jess, and really liked them... DH and the girls liked them too. I added ~1/8 c water because my food processer was not working and I needed to do the batter in the blender. Worked just fine :hugs: Very tasty and cooked up just like regular pancakes. I made 6 "my" size and a couple mini's for Marie... I must make them small. :D

Please share more recipes anytime.

I made them this morning too! I added blueberries & they were really yummy! Glad that you liked them. Same goes for you, I love seeing new recipes!
