I have a huge steak that will feed an army. I'm going to try and do it on the stove top since the last one I did was too thick for the forman grill. I was over cooked on the outside and dry inside. I decided it was because you can't adjust the temp on that thing.

not sure about sides yet. rice, cucumbers maybe since that's what is here.

I made 2 pizzas for the family that they will just have to heat up and a spinach salad.

For myself I took a left over chicken breast from last night and put honey teriyaki sauce on it. I wilted some spinach in olive oil and garlic that a poured over a baked potato. Probably wont be as good as it sounds miro-waved at work. :wub:

You could try pounding it a little thinner. I never make steak unless dh is home to use the grill. Yep he does it all yr long, I should show you a pic of him last winter in the snow, it was quite funny!


Oh and I have no clue what's for dinner. We might have chicken soft tacos. The kids like those but I don't think I have any lettuce. It won't be anything fancy with the way I am feeling!

Umm, It's pretty complicated process tonight. Picking up the kids, driving to McDonalds, waiting at the drive thru, then heading home. LOL

Leftover wheat berry salad with roasted veggies and leftover homemade minestrone soup for me and I think I'll grill some salmon burgers for the kids in my George Foreman.

I think its going to be taco salad tonight. Really because that is the only meal I can remember, LOL! DH did the grocery shopping and I can't find the list which is where I write down the meals we had planned.

I'm trying chicken breasts in cream of chicken soup in the crockpot. Not sure how it'll turn out, but I wanted something low maintenance! I think I'll make rice to go with it. I'll let you know how it turns out. lol
Does anyone have any other suggestions for chicken breasts in the crockpot?

Julie, I had posted this up in The Cookbook last night. Someone on the March board gave it to me but I can't remember who. It's really good! I know this is probably to late for tonight but maybe another night!

Crockpot Ranch Chicken

4-6 boneless chicken breast
1 can cream of mushroom soup
1 cup sour cream
1 packet Ranch dressing mix
1/4 cup white wine (regular or cooking wine)

Whisk together soup, sour cream, Ranch dressing mix, and white wine in crockpot. Add chicken and cook on low 4-6 hours. Serve over rice or noodles.

Note: I'm quite sure you can just add water instead of wine if desired, or leave out the wine altogether.

**I know someone posted this on the March Moppet board but I don't have the name on my copy. It's very good!

Soft tacos/fajita things...
I have a beef roast in the crockpot with fajita seasoning, onion, garlic and a huge can of stewed tomatoes (and the juice from them). I plan to shred the beef and serve with warm corn tortillas, fresh tomatoes, sour cream and salsa. Yummy!

I love doing chix breasts in the crockpot. My favorite is to put the chicken breasts in the crockpot with a cut up onion and some garlic and cover it with marinara sauce. Serve either with pasta or with mashed potatoes and parmesan cheese - the chicken is super tender and yummy. You can melt some mozzerella cheese over the chicken in the crock pot before serving if you really want to make it decadent!
Also can do this with salsa for Mexican chicken and serve with corn tortillas and all the fixins.
I bet I can think of a million ways to do chicken in the crockpot, but these are my two faves.

We are having the baked ziti that Carla posted the other day. I have everything but the provolone and sour cream so I guess I'll run by the store on the way home. Also, I don't have basil but I live in BFE and we don't have fresh herbs. I guess dry will have to do. I need to start a little window herb garden this year. Fresh just tastes so much better.

Baked Ziti


INGREDIENTS:
1 (16 ounce) package dry ziti pasta
1 pound lean ground beef
1 onion, chopped
2 (28 ounce) jars spaghetti sauce
6 ounces sliced provolone cheese
6 ounces sliced mozzarella cheese
1 1/2 cups sour cream
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh basil

--------------------------------------------------------------------------------

DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

In a large skillet, brown beef over medium heat. Add onions; saute until tender. Drain off fat and add spaghetti sauce; simmer for about 15 minutes.

Preheat oven to 350 degrees

In a lightly greased 2 quart baking dish, place about half of the pasta; top with a layer of provolone and mozzarella cheese slices.

Spread on a layer of half the spaghetti sauce mixture and sour cream.

Cover with remaining pasta, cheese and sauce; sprinkle a layer of Parmesan cheese and fresh basil.

Bake in preheated oven for about 30 minutes or until cheese and sauce are bubbly


*although I haven't tried it yet, I'll bet this would be good made with Wendy's crock pot spag sauce!
