Ingredients ::
- 1 can artichoke hearts – not marinated
- 1 7-oz can chopped green chiles
- 1 jar pimentos, drained
- ¾ C sour cream
- 1 C mayo – approximately, see below
- 1 brick cream cheese
- 1 C grated fresh parmesan – not the green bottle Kraft kind
The red, white and green color make it perfect for the holidays.
Drain artichoke hearts. Coarsely chop them… it’ll be messy. Put them in a large bowl with the can of green chiles and the pimentos. Add the rest of the ingredients (start with ½ C mayo) and mix with mixer. If it’s way too thick, add more mayo. You’ll heat this up, so it’ll get a little thinner. Pour mixture into dip-sized crock pot and heat through. Serve with sturdy crackers.
