I don't remember where I got this recipe, but I was going through my stuff and found it and remembered how YUMMY it was and thought I would share!

Ranch Potato Casserole


6-8 medium red potatoes
1/2 cup sour cream
1/2 cup prepared ranch style dressing
1/4 cup bacon bits or cooked bacon, crumbled
2 tbsp. minced fresh parsley
1 can of cream of mushroom soup
1 cup cheddar cheeese, shredded

Topping:
1/2 cup cheddar cheese, shredded
2 cups corn or bran flakes, crushed
1/4 cup butter, melted

Cook potatoes, with skins on, until tender, cut into quarters and set
aside. Combine next 6 ingredients, and pour over cooked potatoes, mix
well. Place potatoes in a greased 13x9 inch pan. Top with cheese.
Combine flakes and butter, sprinkle over casserole. Bake at 350 degrees
for 40-45 minutes.
