I can't wait to read the responses b/c guess what I have out for dinner tonight...lol!

My sister and I used to ask my Mom what she was making and she would say "I have some hamburger meat". We hated when she would say that b/c half the time she didn't know what she was making until she was half way through cooking it....lol! It was always good though.

Let's see......

Tacos
burritos
enchiladas
hamburgers
spaghetti and meat sauce or meatballs
baked ziti
Swedish meatballs
meatloaf (small one)
beef stew
Taco soup
meat patties and gravy
chili

yes, I make a lot of Mexican food with my ground meat...lol!

I would make chili!!! I love making chili with the McCormick's chili seasoning packet, 1 can of kidney beans & 2 cans of diced tomatoes. It is AWESOME!!!

Actually, I usually make it with ground turkey.

Edited to add that my other choice would be to make spaghetti! I always keep sauce & noodles on hand.

I put this recipe over in the cookbook. It's very good, even with the strange ingredients lol. Tastes even better the next day!

Ground Beef Stroganoff

Prep Time: 10 Minutes
Cook Time: 20 Minutes Ready In: 30 Minutes
Yields: 4 servings

INGREDIENTS:
1 pound ground beef
1/2 cup chopped onion
1 (4.5 ounce) can mushrooms,
drained
1/2 teaspoon garlic powder
1/2 teaspoon mustard powder 1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup beef broth
1 (16 ounce) package wide egg
noodles

DIRECTIONS:
1. Break up ground meat into a large skillet, and add onion, mushrooms, garlic powder, and mustard powder. Cook and stir over medium heat until the meat is browned and onion is tender. Drain off excess fat.
2. In a small bowl, combine sour cream, mayonnaise, and beef broth. Stir into beef mixture, and cook over low heat for 10 to 15 minutes. Do not stir too much.
3. Meanwhile, cook pasta in a large pot of boiling water until done. Drain. Serve sauce over hot noodles.

This is what I made last night! Taco Soup in the Crockpot

1 lb ground beef browned and drained
1 can of Black beans, undrained
1 can of Kidney beans, undrained
1 can of corn, undrained
2 14oz canned of diced tomatoes
1 onion, chopped
1 packet of taco seasoning
1 packet of ranch dressing seasoning
salt and pepper to taste
shredded cheese and sour cream

combine all ingrediants in slow cooker and cook on low for 4-6 hours. Garnish with shredded cheese and sour cream.

This was really yummy. I wanted it to be a bit more spicy so next time I am going to add some green chiles to it.

As a side note, I use either ground turkey in place of beef or 96% lean beef and I have found that I don't have to Pre-cook my meat. I just put it in raw and it cooks up in the soup, or sauce or whatever I am making. I think it works because there is not much fat to drain off.

I'm making Shepherd's Pie with my ground beef!

This looks good Tara! I was just thinking that I need more uses for my crock pot...I only use it for beef stew (which is what I have cooking right now!).

I'd make meatloaf, even though the recipe calls for 1½lbs LOL
I put this in The Cookbook:

MEATLOAF

1 1/2 lb hamburger
3/4 cup quick oats
1 1/2 tsp salt
1/2 cup chopped cheese, optional
1/4 tsp pepper
1/4 cup chopped onion, optional
1 beaten egg
3/4 cup milk

TOPPING, OPTIONAL (I double this)
1/3 cup ketchup
1 T brown sugar
1 T mustard

Combine. Pat into a 9 x 5 pan. Spread with topping if desired. Bake at 350 for 1 hour

I love making Mexican food too and would make chili as my first choice. Other things I would make are potstickers/dumplings or spaghetti sauce.

Here's a meatloaf recipe that comes out very moist...

Winnie’s Meatloaf

1 ½ lbs ground beef or ground turkey

1 chopped onion

Salt

Pepper

McCormick’s seasoned salt

1 cup cracker crumbs or quick oats

1 cup milk

1 egg slightly beaten

¼ cup tomato soup

¼ cup ketchup

3 Tbs brown sugar

¼ tsp nutmeg

Preheat oven to 350ºF. Combine beef, onion, some salt, pepper and McCormick’s seasoned salt (be more generous if you like it saltier), cracker crumbs, milk, egg, and tomato soup. Mold into a loaf shape in a large loaf pan. Pour ketchup on top. I usually just use a squeeze bottle and cover the top with ketchup. Then, sprinkle the top with brown sugar and nutmeg. Bake for 1 hour or until the meat thermometer reaches 165º F.

Optional: Sometimes for a little more zing, I sprinkle in some Worchestshire sauce.

Enjoy!

pizza casserole, 1 lb hamb. pizza sauce, shells & cheese, fry hamb mix with pizza sauce, layer in a baking dish, top with shells & cheese and bake 20 min

tacos or taco casserole or burritos

I made burgers the other night, topped them with swiss cheese, ran them under the broiler until they were bubbly and then put some of the Tastefully Simple caramelized onion sauce on top. YUMMMY!

Porcupine Meatballs are also a tasty use for a lb of ground beef.

I would make American Chop Suey.

Just need a box of pasta (elbows/ziti/shells/twists), a couple of cans of tomato soup, some chopped onion and chopped green peppers and some garlic, salt and pepper. Yummy, quick and excellent reheated the next day!
