a quarter of a buffalo! DH has a friend who raises buffalos for the meat and hides. We went in on a quarter of one which is about 100lbs of meat! We'll get steaks, a roast, ground meat, and several other cuts. The meat is really pretty good. It's very lean.
DH also bought the hide on this one so he is going to have it tanned. Don't ask what we will do with it b/c I have no idea. It's HUGE!
Anyone have any buffalo recipes??? LOL!

I believe that you can use it the same way you would with beef, but you may need to add extra oil in some recipes to make up for the less fat in buffalo meat. Yummy!

If you did a google search I'm sure you'd be surprised at the amount of recipes out there. I've done a Caribou or Moose search and I got tons.

I have made a roast before and it was really good. I plan on using it like I do beef or venison. It's going to be lots of meat!
