HELP!! Freezer Recipes Rate Topic: -----

Let me start of by saying, I don't freeze anything. We never freeze anything so I'm askin for help.

I have been invited to an Apple Cider Social where the bunch of us are concocting freezer meals for a family about to have their third baby. Simple right? NO! We have to make one meal for each family attending. I think we're up to 7 right now so I have to make 7 freezer meals with one recipe. I need bulk and yummy combined.

I need freezer meal recipes since I have none nor any clue what freezes well. Anyone have any tried and true recipes?

I like freezing lasagna, it freezes really good. Mine is a very simple lasagna though. I do not put extra stuff in it cause my kids won't eat it. I haven't eaten lasgna in a year though cause of the dairy :)
And quiche freezes great. My kids love quiche! Mine is super simple and making 7 of either meal wouldn't be too bad!

Shepherd's pie works well - you make the meat part and then they can make instant mashed potatoes to put on top and bake.

Any type of casserole works.

I like to just bake a bunch of chicken breasts and cut into strips. Freeze baggies of meal size amounts of chicken strips to add to simple pastas (or even to mac'n'cheese). Also works well with ground beef - fry or boil a large amount and freeze in one-meal size amounts to add to spag sauce, tacos etc.

Theabove links have a bunch of sample freezer recipes. Those are made in bigger batches and frozen in individual meal sizes to you cook once but get a few meals worth.

Lani, are you looking for an all-in-one meal like lasagna or just a meat course, like a marinated chicken? I have two cookbooks that are nothing but freezer meals. I'd be happy to get some of our favorite recipes to you, but the cookbooks are at home. I can have them tomorrow morning.

Here's an easy, yummy, healthy chicken recipe that freezes well. It sounds odd, but it's awesome! This is just for ONE recipe, so you'd have to x7 it.

3/4 C medium salsa
1/4 C brown mustard
3T lime juice

Mix all and toss with a pound or so of chicken breast meat that has been cubed. Freeze it in the marinade. Thaw it and heat it in a saucepan until the chicken is done. Serve over rice or pasta.

Thanks ladies! We decided to go with lasagna. I was sure I'd seen those frozen before but didn't know how well pasta stood up to being frozen.

We're going meatless since we think the family is vegetarian.

How have I made it this far without freezing anything? We buy frozen veggies and fruits, we freeze meat before we cook it, we buy ice cream and stuff but never pre-made meals or leftovers. Ian asked me last night about my mom doing it and she never did either.

I feel like a dork asking!
