Category :: Other Desserts
Ingredients ::
  • 2 1/2 c granulated sugar
  • 3 1/2 c unbleached flour
  • 2 tsp cinnamon
  • 1 tsp ground nutmeg
  • 1 1/2 tsp salt
  • 2 tsp baking soda
  • 1 cup canola oil
  • 1/3 c water
  • One 15 oz can pumpkin puree
  • 2 eggs, beaten
  • 6 to 12 oz semisweet chocolate chips (optional)
Description ::
Delicious and easy!!

Makes 3 8-inch loaves or 24 muffins

they are almost TOO much for some in my family with the choc chips, they'd be equally yum without and less sugar.

Preheat the oven to 350 degrees. Lightly grease three 8 by 4 inch aluminum foil loaf pans or two 12 compartment muffins pans (or use paper liners).

In a large bowl, combine the sugar, flour, spices, salt and baking soda.

In a medium bowl, combine the oil, water, pumpkin puree and eggs.

Add the liquid mixture to the flour mixture and combine thoroughly, making sure no unblended dry ingredients linger at the bottom of the bowl. Add the chocolate chips, stir to combine.

Divide the batter equally among pans; muffin cups should be 2/3 full.

Bake the loaves for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean or the tops of the loaves are springy to the touch. (Muffins will take about 30 minutes). Let cool completely before cuttiing and storing.
