This was one of my favorite meals when I was a kid. My mom always gave us a large glass of cold milk with it because the sauce over the chicken/broccoli is pretty rich. My whole family loves this.
Two large boneless chicken breasts
10 oz. broccoli, cooked
1/2 cup mayonaise
1 tsp. curry powder
1/2 tsp. lemon juice
1 can cream of chicken soup
1 cup of grated cheddar cheese
3/4 cup butter/margarine
Breadcrumbs (about 1 lb)
Cooked rice
Simmer chicken breasts in water for an hour. Let cool then cut up into small pieces.
Grease the bottom of a 9x13 casserole dish.
Place the cooked chicken pieces and cooked broccoli pieces onto the bottom of the dish.
Mix together: mayonaise, curry powder, lemon juice, and chicken soup. Spread the mixture on top
of the chicken and broccoli.
Sprinkle a layer of cheddar cheese on top of that layer.
Melt the margarine and mix it with the breadcrumbs. Spread the breadcrumbs on top.
Cook the casserole in a 350 degree oven for one hour.
Serve over cooked rice.
