Title :: Pork, Onions & Peppers

Ingredients ::
  • 1.5 lbs. pork roast cut into 1-inch strips
  • fresh pepper cut up into strips (I used 1/2 green and 1/2 orange pepper)
  • 1/4 tsp. Rosemary
  • 1/8 tsp. Salt
  • 1/4 tsp. Pepper
  • 1/8 tsp. Red Pepper Flakes
  • 1 cup chopped onions
  • 1/2 cup chopped/diced tomatoes
  • 1/4 cup water

  • Cooked Rice
Description ::
This is from the Betty Crocker 125 Low-calorie dinners and is basically a pork stir fry with minimal ingredients.

Cut the pork into 1-inch strips, saute till browned in olive oil for 10-15 minutes.

Add all the rest of the ingredients, except for the fresh peppers.

Cook for about 20 minutes on low. Stir it often to make sure it's cooking but not burning. The mixture will actually thicken.

For the last 5 minutes add the fresh peppers.

Serve over cooked rice.



FYI: When I plated the meal I put the rice into a round bowl and put the pork mixture on top then dished it out like a stir fry. It was super. It will serve 4-5 people easily.
