Title :: Black Bean Chili with Fritos

Ingredients ::
- 1 pound lean ground beef or turkey
- 1/2 medium onion, diced
- 3 cloves garlic, diced
- 1 tablespoon chili powder
- 1 1/2 teaspoon ground cumin
- 1 small can Rotel, with juice
- 1 15 oz can tomato sauce
- 1 4 oz can mild green chiles
- 1 15 oz can black beans, drained and well-rinsed
- 1 15 oz can great northern beans, drained and rinsed
- 1/2 cup (or more!) chopped fresh cilantro
- Jack cheese, shredded
- Bag of Fritos
I'm not a big fan of chili, but this was outstanding!
1. In a large pot, add the beef and cook until no longer pink.
2. Add the onion, garlic, chili powder and cumin and cook over medium heat for 5 minutes.
3. Add the Rotel, tomato sauce, chiles and beans. Bring to a simmer. Cook uncovered, stirring occasionally, until thick, about 30 minutes.
4. Stir in the cilantro
5. Put a handful of Fritos in your bowl. Spoon chili on top of the Fritos. Top with cheese. Let stand until cheese is melty.
