Ingredients ::
- 1 can cream of mushroom or cream of chicken soup
- 1 can green enchilada sauce (we like mild)
- 1 small can diced green chiles (optional)
- 16oz tub of sour cream
- chicken tenders or chicken breast
- corn tortillas
- grated cheese
long name but they are sooo good! This is my friend's recipe and she doesn't put the can of diced green chiles. That's my addtion.
Boil chicken until done. Dice or shred chicken and set aside. Preheat oven to 350. In a sauce pan combine soup, 1 can water, enchilada sauce and green chiles. Cook over medium heat--stiring often--until combined and warm. Spray casserole dish with non-stick spray. Cover bottom of dish with a little sauce then tear up a few corn tortillas and put a layer in dish. Layer of sauce, chicken, then cheese. Do another layer (tortillas, sauce, chicken, cheese) then top with tortillas, sauce, and cheese. Bake for 20-30 minutes until cheese is melted and bubbly.
