I made this for a family party this weekend. It was well recieved....esp. by my SIL!!!
CAKE:
4 cups diced peeled apples
(I used 2 Gala & 2 Cortland)
1 3/4 cups sugar
(I used 1/2 cup brown sugar, 1 cup white sugar)
2 eggs
1/2 cup vegetable oil
2 tsp. vanilla
2 cups sifted flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 cup chopped walnuts
(I probably used closer to 3/4 cup)
Preheat oven to 350 degrees. Combine apples & sugar; set aside. In a large mixing bowl, mix eggs, oil & vanilla. Beat for 1 minute at medium speed. Combine dry ingredients & add to egg mixture, alternating with apple mixture. Mix until apples are thoroughly covered. Stir in walnuts. Spread into a greased and floured 9"X13"X3" pan. Sprinkle with topping recipe. Bake at 350 degrees for 45 to 50 minutes or until cake tests done with a toothpick. Do not underbake.
TOPPING:
1/2 cup light brown sugar
2 tbsp. flour
2 tsp. cinnamon
2 Tbsp. cooking oil
(I used about 3 Tbsp. of melted butter)
1/2 cup finely chopped walnuts
(I just used the rest of the bag)
Combine all topping ingredients with a fork. Sprinkle on batter.
