Title :: PepperJack Corn & Crab Chowder

Ingredients ::
  • 2 T butter
  • 1 1/2 cup small red potatoes, unpeeled and diced
  • 1 1/2 cup onion finely chopped
  • 2 cups fresh or frozen corn
  • 3 cloves garlic, minced
  • 3 cups half and half
  • 1 cup diced red bell pepper
  • 3 T cornstarch
  • 1 (12-14 oz) can of low fat chicken broth
  • 12 oz pepperjack cheese, shredded
  • 1 cup water
  • 2 cups crabmeat, chopped
  • 1 tsp. cumin
  • 1 T cilantro, freshly chopped
Description ::
Sure to become a favorite!

In pan over medium heat, melt butter. Add onions, garlic, and saute 4-5 mintues until softened and golden. Stir in red bell pepper, broth, water, and cumin. Bring mixture to a boil, sitr in potatoes. Cover and cook 5 minutes. Stir in corn and cover, simmering 10 minutes or until potatoes are tender. Stir together half and half and cornstarch until smooth. Slowly stir mixture into soup. Bring to boil. Reduce heat to low and stir in cheese, stirring until smooth and thickened. Stir in crabmeat and cilantro and heat through. Garnish with cilatro.

(You can substitute imitation crabmeat and it still tastes good!)
