Title :: Fruit Cake

Ingredients ::
  • 1 lb. whole pecans or walnuts
  • 1 lb pitted dates (chopped)
  • 2 candied green pineapple (cut up)
  • 1/2 lb candied red cherries (cut in 1/2)
  • 4 eggs
  • 2 tsp. baking powder
  • 1 tsp salt
  • 1 cup sugar
  • 1 cup flour
Description ::
Holiday Fruit Cake

Beat eggs, add sugar, salt, baking powder. Then, add the rest of the ingredients.

Bake at 250 degrees for approx. 2 hours. Put a pan of water in the oven while baking.

Use 4 mini loaf pans, 1 angel food pan or 2 regular-sized loaf pans.

Grease the pans, then line them with wax paper before adding the batter. When done, (check with toothpick), pull them out of the oven and immediately remove them from the pan. Place on a rack and remove the wax paper.

This stuff is SOO great! It is part of our family tradition now - my Dad was not happy when I decided not to make it last year.
Side note: One year I thought I would cut corners and just buy one big container of the mixed chopped candied fruit. MISTAKE! There was orange peel in that container and it threw the whole flavor of the fruitcake off. I will never do that again.
