Ingredients ::
- 1 lb. whole pecans or walnuts
- 1 lb pitted dates (chopped)
- 2 candied green pineapple (cut up)
- 1/2 lb candied red cherries (cut in 1/2)
- 4 eggs
- 2 tsp. baking powder
- 1 tsp salt
- 1 cup sugar
- 1 cup flour
Holiday Fruit Cake
Beat eggs, add sugar, salt, baking powder. Then, add the rest of the ingredients.
Bake at 250 degrees for approx. 2 hours. Put a pan of water in the oven while baking.
Use 4 mini loaf pans, 1 angel food pan or 2 regular-sized loaf pans.
Grease the pans, then line them with wax paper before adding the batter. When done, (check with toothpick), pull them out of the oven and immediately remove them from the pan. Place on a rack and remove the wax paper.
