I would make Easy tortilla soup! Brenda

EASY CHICKEN TORTILLA SOUP

This version of Chicken Tortilla Soup is quick, healthy, delicious and so easy that you can almost wiggle your nose to create this tiny masterpiece. This ultra easy recipe for chicken tortilla soup will make 2 generous servings.
2 cans of chicken broth OR 1 can of chicken broth + 1 can water
1 cup of cooked, cubed lean boneless chicken
1/2 Can of Ro-Tel diced tomatoes & green chiles OR up that to the entire can if you like your chicken tortilla soup tomato-ie.
1 ounce of shredded skimmed white cheese
Homemade Tortilla strips (recipe included below)
In a saucepan, combine all ingredients except cheese and simmer about 10 minutes. Serve soup hot with shredded cheese. Sprinkle soup with a bit of chili powder if desired. Look for different versions of Ro-Tel when shopping that will lend your chicken tortilla soup a different flavor
Tortilla strips for Easy Chicken Tortilla Soup:

Slice one CORN tortilla shell into thin strips. Spray with Pam. Place into preheated 375-degree oven until crisp.

Add to warm soup

***I didn't have any Rotel so I used a can of diced tomatos and diced green chilis and it came out really good. I also added some garlic powder, chili powder, and dried onion bits. DH really liked it.
Forgot that I also added half a small bag of frozen corn so we had our veggie in the soup. Someone also suggested adding avacado slices. I made this because it was low cal and low fat so the avacado would have added fat.

chicken salad

shred it up and add mayo, s&p and a little pickle juice B)

or Easy chicken enchiladas

shred it up
1/2 cup sour cream
1/3 cup ranch dressing
can chopped green chilis
2 cups shredded cheddar
flour totillas (which I know you have lol)

mix chicken, cream, ranch, chilis, onc cup cheese. fill tortillas and roll up. place in a greased casserole dish. Cover with remaining cheese and bake.
350 about 20 mins, until cheese melts

I'd make barbecue chicken sandwiches.

Shred chicken, add bbq sauce, heat, serve on toasted buns/bread.

Very easy and very yummy!

Lemon Pepper Chicken...very easy...just sprinkle with lemon pepper seasoning and viola!
