so what would you make that was meatless??? We aren't vegetarians but we eat A LOT of meatless entrees because we just aren't big meat eaters and I'm always looking for new ideas. As a side note, we tried the baked ziti recipe (I think it was Carla's) the other night and I made it meatless and it was YUMMY! I never have put sour cream in italian before! Thanks for the recipe!

Our meatless meals are usually something like mac & cheese, cheese/veggie pizza or cheese ravioli. Sometimes I make this pasta dish with diced tomatoes, mushrooms, spinach & chicken broth. Sometimes I make meatless stir-fry too. We usually try to have one meatless meal a week.

one of my favorites, taken from a rachel ray idea
thick cubes of yellow squash, onion and zucchini sauteed with a big can of stewed tomatoes and garlic. I use this as a side dish and I did serve it over linguini once and it was sooooooo yummy!

Edgar Allen Poe Pizza
Boboli or homemade crust
"white sauce" - extra virgin olive oil and pressed garlic (put this on with a pastry brush)
Greek/kalamata olives, pitted
sliced fresh mushrooms
roasted whole garlic cloves
mozzarella
fontina
After baking add:
crumbled goat cheese or feta
diced fresh tomatoes
Boboli or homemade crust

I love Rachael Ray! There is a recipe in one of her books that I really enjoy called winter vegetable stew and it is served with potato and smoked gouda pancakes. The gouda pancakes take a little more time to prepare but it is really yummy.
Don't know if you have tried soy products but there are a lot of new products on the market now that are good. My favorite veggie burger is Dr. Praeger's California burger. I usually top it with hot sauce. I recently tried a meatless gumbo dish and it turned out yummy. I posted a spicy gumbo dish in the kitchen under 'Vegetarian'. I made veggie fajitas this week and it was super easy and tasty...just sauteed some chopped garlic in a little olive oil, added sliced peppers, onions and baby portabella mushrooms. Then added some lemon pepper and garlic powder. Place them in a tortilla with salsa and shredded cheese...voila...done!

Nothing better than a big pot of beans (pinto, Lima, great northern, etc) for a meatless meal night. I do usually put a ham shank or some salt pork for flavor. Serve with cornbread
What about vegetable soup or cheese enchiladas?
You could also make bean tostados ~ take corn tortillas and fry in a little oil until crispy and flat. Top with refried beans, cheese, lettuce and tomato. Oh guacamole is good on it too!
