Here's what i have in my freezer:

Chicken
Ground Beef
Ribs


Any suggestions?

well you could make chicken or I guess ground beef. and of course don't forget your ribs option :)

I'm defrosting chicken for tonight and making enchiladas (the ones we had for your bday last) and chicken salad for lunch tomorrow.

You're freakin' hilarious. I was looking for something creative genius. But the enchiladas do sound good. Maybe I'll make that.

Easy chicken suggestion:

If you have a packet of powdered ranch dressing, this is awesome! Just mix it with a good helping of breadcrumbs (maybe 3/4 C). Dip the chicken in egg and then in the bread crumb mixture. Bake till done. Yummy!!
