I think we are going to have sausage Jambalaya and a veggie.

Pasta and meatballs for kids, Leftover ma po tofu for me and DH, and steamed broccoli for all

so what is ma po tofu? Inquiring minds want to know!

It is usually made with ground pork but I use ground turkey or chicken, cut up squares of tofu, canned chinese veggies (baby corn, water chestnuts, straw mushrooms, bamboo shoots), frozen peas, chicken broth, soy sauce, oyster sauce, cornstarch for thickening, sesame oil, hoisin sauce, salt and white pepper to taste. I don't measure but go by looks and taste...lol! I also like to add some chili garlic paste on the side to make it spicy.

They do sell pre-made sauce in jars or packets called Sauce for Ma Po Tofu in asian markets here but I don't like them as much.

sounds very good! I like to make mixed veggies, meat, and a little soy sauce thickened with corn starch over rice. I took an oriental cooking class once and learned all kinds of great dishes to make but rarely make them...lol! I love spring rolls and egg drop soup. Thanks for sharing!
