I'm hoping to get some ideas b/c I have no idea what I'm making tonight....lol! Brenda

Chicken enchiladas! Really easy to make. Cover the bottom of a 13x9 glass dish with enchilada sauce. Put shredded Mexican blend cheese and chicken shredded from a storebought rotesserie chicken in small flour tortillas and roll them up, setting them in the dish side by side. Cover the rolled tortillas with enchilada sauce and sprinkle with leftover cheese, sliced black olives, and chopped green onions. Bake for 20-30 minutes at 350 degrees.

Hope that was clear...I'm used to just throwing this together really fast, it's almost second nature.

that sounds good Wendy! I'll have to try it. We had chicken last night so Dh won't eat it again...lol!


I think we are going to have fish. Dh has been making a baked fish that is so good. Maybe I can talk him into making it again. Sides to be decided later.

I'm coming to your house for dinner, k?? I think I'll have to try that somenight!

All this food sounds so good, I was just gonna throw a pizza in the oven for the boys, LOL. I have to go to a preschool meeting tonight and there's always yummy food there, but I always feel guilty eating any since I usually eat dinner first. But, had a big, late lunch today so I might be able to hold out.

I know I'm late, but tonight I'm thinking of grilling some marinated chicken and some onions on my new George Forman grill & then making quesadillas. I'll put the chicken, onion & lots of cheese inside a buttered-side down tortilla & grill it in the Foreman grill. Yummy!!!

Neal ended up calling and saying that he was bringing BBQ sancwhiches home so I didn't have to cook last night.

I guess we will have fish tonight instead.

LOL Brenda...are we married to the same man? My DH won't eat chicken two days in a row either. If I even suggest it he'll go to Subway....spoiled brat!
