I sautéed some zucchini and squash in olive oil until tender. Then I added some grape tomatoes cut in half. I added about 1/2 lb of peeled shrimp and a little chicken stock and cooked until the shrimp were done. I also had added some garlic powder, basil leaves, salt and pepper. I served it over bow tie pasta and sprinkled with a little grated Parmesan cheese. It was so good!
I had a small salad with mine but Dh and DD just ate the pasta/shrimp.

Oh, that IS yummy! I've made something similar...although it's usually a summer dish here, when the veggies are in season.

I bought a bunch this past summer when they were dirt cheap. We sliced them then put them in our meal sealer bags and froze them. It's just like eating fresh veggies! I just did zucchini and squash this year but plan to do more next summer. I also did quite a bit of meat when the grocery was having great deals. I just keep forgetting to take meat out in the mornings

They didn't get smushy? Everytime I had tried to freeze zucchini it is very mushy when defrosted.

They were a little mushy but not to bad. The freezer bags really help seal in the freshness. Of course this week squash and zucchini are .89c a pound like they are in the summer...lol! I bought a few fresh ones to make something with.
