Ingredients ::
- 3 cups quick Quaker oats
- 1 cup packed brown sugar
- 2 teaspoons baking powder
- ¾ teaspoon salt
- ¾ teaspoon ground cinnamon
- 2 eggs, lightly beaten
- 1 cup milk
- 1/2 cup butter, melted
- 1 tart apple, peeled and chopped
- 1 fresh peach, peeled and chopped
- ½ cup fresh blueberries
- Additional milk and/or maple syrup
Talk about a comfort food! It's relatively healthy too!
In a large bowl, combine the oats, brown sugar, baking powder, salt and cinnamon. In a separate bowl, combine the eggs, milk and butter; add to the dry ingredients. Stir in the apple, peaches and blueberries.
Pour into a greased 8-in. square baking dish. Bake uncovered, 350° for 35-40 minutes or until a knife inserted near the center comes out clean. Cut into squares. Serve with milk or maple syrup if desired.
