Title :: Slow-Cooker Black Bean Chili

Ingredients ::
- 1 lb pork tenderloin, cut into 1-inch chunks
- 16 oz. jar thick chunky salsa
- (3) 15 oz. cans black beans, rinsed and drained
- 1 can low sodium 14.5 oz. chicken broth
- 1 medium red bell pepper, chopped
- 1 medium onion, chopped
- 1 tsp ground cumin
- 2 tsp chili powder
- 1½ tsp dried oregano
- Optional Garnish: Sour Cream or shredded mexican cheese blend
- Optional Ingredients: your choice of pasta or rice

1. Combine all ingredients except sour cream in crockpot.
2. Cover. Cook on low 6-8 hours or until pork is tender. If in a hurry, cook on high 3 hours and turn down to low for 1-2 hours.
3. Garnish individual servings with sour cream or shredded cheese if desired. It tastes fine without it.
Notes:
- If you like less spicy foods, be sure to use mild salsa and decrease the chili powder to 1 tsp. You can always spice it up after it's done with more chili powder.
- My kids liked this with some bead shaped pasta (acini di pepe) in it and it would probably taste yummy over rice too.
