Author :: bblessed
Category :: Crockpot/Slow Cooker
Ingredients ::
  • 1 lb pork tenderloin, cut into 1-inch chunks
  • 16 oz. jar thick chunky salsa
  • (3) 15 oz. cans black beans, rinsed and drained
  • 1 can low sodium 14.5 oz. chicken broth
  • 1 medium red bell pepper, chopped
  • 1 medium onion, chopped
  • 1 tsp ground cumin
  • 2 tsp chili powder
  • 1½ tsp dried oregano
  • Optional Garnish: Sour Cream or shredded mexican cheese blend
  • Optional Ingredients: your choice of pasta or rice
Description ::
adapted from the Fix-It and Forget-It Cookbook

1. Combine all ingredients except sour cream in crockpot.
2. Cover. Cook on low 6-8 hours or until pork is tender. If in a hurry, cook on high 3 hours and turn down to low for 1-2 hours.
3. Garnish individual servings with sour cream or shredded cheese if desired. It tastes fine without it.

Notes:
- If you like less spicy foods, be sure to use mild salsa and decrease the chili powder to 1 tsp. You can always spice it up after it's done with more chili powder.

- My kids liked this with some bead shaped pasta (acini di pepe) in it and it would probably taste yummy over rice too.

Enjoy!
